Yesterday was a nice day. After my gardening class with Madison we headed to the Bellingham Farmer's Market. We spent a lot of time there checking everything out. We had lunch there and it was amazing. I had the best sandwich on delicious bread. The sandwich had grilled free range chicken, grilled apples, jalapeno gouda and greens. There was also a pesto and tomato pasta salad and I got a lavender infused iced tea.
We also got some great local and organic produce. I got some kale, sunflower sprouts, beats, radishes and turnips. I also got some organic veggie starts (purple kale and purple string beans). I can't wait to go home later today and make my favorite beat and kale salad with walnuts. Nobody else will eat it but the girls love asking to see my mouth while I am eating since my teeth and tongue are bright red. I saw several people I knew and the energy there is just so positive and fun. We ended up staying so long that we missed the strawberry festival.
Today is Father's Day and we are planning to go soon but the weather isn't as nice as yesterday so Eric and I have been debating whether or not the kids will be up for it. Madison doesn't like to be outside in the cold so Eric is going to dress her warm and we'll hope for the best. The ice cream treat afterwards will entice her I'm sure.
After the Farmer's Market we headed to get a new kids swimming pool because Kennedy jumped on the upside down pool the other day and put a big crack in it, oops. It was a bit disappointing to store that big blue pool in the garage all year just to have it crack after one use. Such a waste of plastic but the girls are having fun with it anyway, it's become sort of a gravel sandbox near the play structure.
We headed home for an afternoon in the yard. The girls played on the play structure and in the pool while I weeded the garden and planted my new starts. I also planted a bunch more seeds. I am going to get all new seeds next year so I planted as much as I possibly could. I still don't really know what I am doing in the garden so we'll just see what happens. Some stuff is doing well and I hope we get as many cucumbers as last year. I've got lots of stuff planted...cucumbers, strawberries, peas, sugar snap peas, green beans, purple beans, spinach, kale, cauliflower, broccoli, onions, parsley, basil, cilantro, tomatoes, green peppers, carrots, different lettuces and zucchini. There are probably more but I can't recall right now. I've already enjoyed some peas and lettuce from the garden as well as plenty of strawberries. My parsley is already getting too big and I should cut some off and thin my carrots. Maybe I'll do that later if the weather is nice enough. I won't get much of a chance to cook over the next week and a half so once my class is over I intend to make lots of delicious and healthy food from my backyard. We have reduced the amount of meat we eat and have changed to strictly organic chicken (Costco sells it now). It's more expensive but we are eating less of it so it's not costing anymore than normal. We are a long way from eating the way we should but we're moving in the right direction. I feel so much better when I eat higher quality foods. Even after lunch yesterday I felt great and so much better than I would have if we had gone out to eat at a typical place.
We grilled turkey burgers and wild salmon burgers for dinner last night along with grilled asparagus which is my absolute favorite vegetable. I also got a yummy coleslaw at the Co-op yesterday after we left the Farmer's Market since we had to make a quick pit stop for more sunscreen. We are really going through the sunscreen already this year. I had some on for our gardening class but should have put more on in the afternoon because I got burnt doing the gardening.
The girls went to bed last night in Madison's bed again and love it. We will never get Kennedy back in her crib I'm sure. Madison was out of her crib much sooner than Kennedy but I haven't wanted to buy another bed yet until Eric gets back to work so maybe this will work itself out. Eventually I want to get Madison a bunk bed and put her bed in Kennedy's room. Someday.
I stayed up late balancing the checkbook and doing laundry. It was nice to get caught up on a few things inside since we've been outside or gone so much. The house still needs a really good cleaning but it will likely have to wait until my clinicals are over.
I have been at The Woods for a few hours working on a presentation I have to give Tuesday night. Eric and the girls will be here soon to pick me up so we can enjoy the rest of Father's Day together and, hopefully, get some strawberries picked.
Life has been a bit depressing lately but there is so much to be thankful for. As I sit here I see a homeless person sitting downstairs working on his sign that he will hold. My heart has been breaking lately when I see people in need. Stressing over money seems so silly sometimes as I realize how much we have compared to so many. I want my girls to know how blessed they are too. It's hard for me to see Madison get so upset when she can't buy a necklace that she wants or the newest Barbie. I want my kids to be happy and to have some of the things they want but I want them to have a heart of service and empathy. I hope this will happen and that I am doing my part. They are smart and caring girls so I think they will do their part and more.
