Our Yesterday

Here is a picture of what the carrots in my garden look like since I never got around to thinning them. I actually kind of like them, they are cute and curly and fun to eat.
 
Yesterday was a prime example of my all or nothing issues and my struggle to make the time to fix healthy food. In an effort to reduce plastic (especially plastic with BPA) I put my food steamer in the garage sale. I use this food steamer all of the time, it's an electric plastic steamer and it's used most nights of the week at my house. I knew I was going to desperately miss it. Because I needed some sort of steamer I got a different one yesterday. I got one of those stainless steel steamer baskets, the ones that fold out to fit the pot they are sitting in. Let's just say there were no instructions and I didn't know how much water to use. Above is a picture of the bottom of my pot after steaming my beets. Oops. Believe it or not I got the black burnt stuff off the pot and the bottom of the new steamer basket but I'll have to pay more attention next time. Yesterday we needed to get our garage sale set up but when I cook it takes me forever! I had beets that needed to be cooked, grapes, bananas, zucchini and strawberries to be washed (yes, I wash my bananas). I had corn on the cob to cook for dinner with spinach and fish. I had carrots to harvest, wash and peel as well as harvesting and washing the spinach and kale. It was ridiculous really but I feel the need to do everyone in one evening. Because I was trying to get so much done I burned the pot, kept dropping things, made a huge mess in the kitchen and never got to helping Eric with the garage sale stuff which led to another 2:00 a.m. night for us. I just can't seem to find balance.
An exciting picture of produce. I always feel the need to prep all my produce the same day I bring it home. This is so much more convenient but it is so time consuming.

Here is dinner just before going on the grill. It was quite good but I'm not sure it was good enough to make again. It was wild caught Dover sole (which I realized after I got home wasn't on my "safe" list for sustainable fish so I won't be getting this again) with spinach, parmesan cheese and garlic stuffed inside. The recipe called for it to be baked in the oven with tomatoes on top but it was far too hot to turn on the oven. Cooking the spinach for a few minutes on the stove was crazy enough in that heat.
Despite all of the time consuming stuff last night this was the one thing that was SO easy. I had just read somewhere that cooking your corn with the husk and silk still attached on the grill for 15 minutes is a really easy and fast way to do it. They were right. I didn't have to do anything to the corn, just threw it on the grill straight out of my grocery bag and tada. It was perfectly cooked and the husk and silk came off so easily, much easier than if I had husked the corn beforehand. I also read that if you cook it this way and put it in a cooler it will stay warm for at least 6 hours.
